A bit of BEERstory: barley must be dried after malting in order to stabilize it and allow for storage over long periods of time. Malt was once spread out over a wood fire, where it was regularly turned to standardize the evaporation of moisture. This process was done manually with a shovel and it indeed produced irregular results. Some grains had more contact with intense heat and became caramelized while others had less contact and a lighter overall colour. This led to a finished product comprised of light and dark grains. Depending on the ratio of lighter and darker grains, beer made from this malt was either a lighter or darker shade of red. Modern technology allows today’s malted barley grains to be heated uniformly. The majority of malt produced is pale, and maltsters deliberately caramelize barley grains to create a special variety of malt. These developments render current-day beer much more stable. Our Rousse is brewed with a majority of pale malt and a healthy percentage of malt of varying degrees of caramelization to lend our Rousse flavors of roasted hazelnuts and slightly burnt caramel.
