Solera Verte

A solera is an aging and assembly process in which brews are traditionally transferred from oak barrels to oak barrels following the first fermentation. The complexity created by the acidophilus bacteria and the wild yeasts during the six months aging in these barrels imparted a slightly tart farmhouse character to this beer. For our Solera verte, generous amount of hops was added during the secondary fermentation and Citra for dry hopping as well as an addition of green tea (Matcha). It added nice herbaceous and fruity notes to the beer as well as a greenish hues.
