Solera Rouge

A solera is an aging and assembly process in which brews are traditionally transferred from top to bottom in stacked oak barrels. Our Solera rouge received an addition of grape must during the secondary fermentation, adding mellow flavours of red wine to the finished product. Six months of aging in our solera process, imparted a slightly tart farmhouse caracter. The acidity created by the acidophilus bacteria in our Solera rouge delivers a complexity in the mouth that, with citrus and red berries notes, makes it a most pleasant hybrid beer.
